A hearty, flavorful dish. You won't even miss the pasta.
What you need:
1 Spaghetti Squash
Pasta sauce of your choosing
Shredded mozzarella cheese
1 chicken breast, cut into strips
1 egg
1/2 cup flour
1/2 cup bread crumbs
salt and pepper
olive oil
vegetable oil
Instructions:
1. pierce spaghetti squash a few times with a fork. put in microwave on high for 5 minutes
2. squash should be easier to cut now-cut in half, length wise
3. use a spoon to scoop out all the seeds
4. drizzle olive oil, salt, and pepper on the insides of the squash. flip over and bake on foil on baking sheet for 40 minutes in a 375 degree oven
5. while that bakes, bread your chicken strips. put strips in the flour first, then egg wash, then the breadcrumbs to coat. add breaded strips to a pan filled with vegetable oil on medium heat. oil should cover halfway up the sides of the chicken strips.
6. chicken should be sizzling. cook about 4 minutes on each side (we like ours a little more done). place chicken strips on a paper towel on a plate when done.
7. once the spaghetti squash is done, flip them over and use a fork to shred up the insides. it should look like little spaghetti noodles!
8. pour about a 1/4 cup of pasta sauce on top, spread with the back of a spoon. then top with some cheese, and chicken strips. add more sauce, and more cheese. top with salt and pepper to taste.
9. put back in the oven, and bake for 15 minutes in a 375 degree oven. when the cheese starts to brown, it's done!
This meal is so filling that we rarely even make a side dish to go with it. Wait for it to cool and enjoy!
