I'm trying to get more protein lately by having eggs every day. Here are three ways I've been eating them to keep it interesting but still very simple!
Simple Californian
Omelet style, topped with pico de gallo, avocado, salt & pepper.
Quinoa Scramble
Scoop of quinoa, scrambled eggs, tablespoon of pesto, avocado, salt & pepper.
Sweet Potato Toast
Toasted sweet potato slice, topped with cream cheese, omelet style eggs, red onion, avocado, salt & pepper, EVERYTHING BUT THE BAGEL seasoning.
