Recipe: Beet-Ginger Smoothie Bowl


If you want to eat something that feels a little fancy, is packed with flavor AND nutrients, then this is a wonderful breakfast option. It's my new favorite, and it only take a minute to whip up. The ginger gives it a little 'kick' and the beets provide a good source of fiber, iron, potassium, and folate.


Ingredients:

1 cooked beet, peeled and roughly chopped

1 tbsp grated ginger

1/4 cup frozen pineapple

1/4 cup blueberries

1 cup coconut water


For the topping:

Small handful of fresh berries

1/4 cup pomegranate seeds

1 tsp bee pollen

2 tsp cacao nibs

2 tsp black chia seeds


Instructions:

Place all ingredients in a high-speed blender and blend until smooth. Pour smoothie into a bowl and top with all the goodies :)


I bought raw beets and steamed them myself, but to make it easier you can always buy pre-cooked beets. This is a Thrive Market recipe that is so easy to make your own-just by switching out certain toppings, or changing the ratio on the ingredients to adjust the flavor to your personal preference. I topped mine with fresh strawberries, and used a chia/flaxseed mix. If you try it, let me know what you think! Enjoy!
