My favorite Key Lime Pie is so delicious and easier than you think.
Start with a three ingredient graham cracker crust. Pulse graham crackers in a food processor until it's fine. Add 6 tbsp of melted butter, and a 1/4 cup of brown sugar. Mix together and then pour into a pie dish. Use a rubber spatula or the back of a spoon to flatten it on the bottom and sides. Bake at 350 degrees for 5 minutes, then pull out to cool.
The key to a yummy pie filling is on the back of the Nellie & Joe's Famous Key West Lime Juice. Mix together 1/2 cup of the lime juice, with 14oz can sweetened condensed milk, and three egg yolks. Blend until smooth. Pour filling into your pie dish, bake at 350 degrees for 15 minutes. Let it cool for at least 10 minutes before putting it in the refrigerator.
Then to 'whip up' some whipped cream for the top, just mix a cup of heaving whipping cream, 1/2 tsp of vanilla extract, and 2 tbsp of powdered sugar on high in a stand mixer for about 10 minutes, or until hard peaks form.
Such an easy summer dessert that everyone loves, but the secret is to use Nelly & Joe's.
