This is my FAVORITE burger. I don't eat red meat. So the only burgers I eat are turkey, veggie, and black bean burgers. I've been making these black bean burgers for years and I CRAVED them during my last pregnancy (photos to prove it).
So easy and they can be wrapped individually and put in the freezer. Top them with whatever you like or do what I do! Full details below:
Blend in a food processor:
14oz can of black beans, rinsed
half an onion, chopped
tbsp dijon mustard
2 tbsp tomato paste
1/2 cup chopped walnuts
1/4 cup breadcrumbs
salt and pepper to taste
Scoop out mixture in 1/4 cup increments and use your hands to form into patties. Put in the refrigerator for at least an hour prior to cooking. You can also wrap individually and freeze. Makes 4 burgers.
When ready to cook, heat a little olive oil in a pan on medium-high heat. Once the bottom gets brown, flip. Total cook time is about 6-7 min.

*toasted bun
*sauteed onions with balsamic vinegar
*avocado
*my HOMEMADE pesto (see recipe here)
*side of ketchup
Nothing like satisfying a pregnant woman's cravings. But I STILL love this burger!
