A Gluten Free Menu

I helped host a bridal shower this past weekend with the fun challenge of a gluten free menu. I was really happy with how everything turned out so I wanted to share the menu I created and the recipes used. I hope you enjoy!

First platter was a take on a lox bagel, but I went without the carbs. I did a 1/2 inch slice of cucumber, with a dollop of cream cheese, slice of smoked salmon, plus a little sea salt, lemon, and Everything But the Bagel seasoning. Looking back, I should have totally added a slice of red onion.

We served a gluten free pasta salad that was filled with roasted veggies-zucchini, red onion, sweet potatoes, corn, zucchini, and cherry tomatoes. I used Banza pasta made with chickpeas, and dressed it with a lemon vinaigrette. I based my recipe off of this one, minus the gnocchi.

The chicken salad was a beautiful presentation and I cannot take credit for this one. The mother of the groom offered to provide this and it was so beautiful. We served it with gluten free crackers. I found a chicken salad recipe here with a similar presentation.

While I didn't snap a picture, I made my family's famous zucchini bread. This time I made it gluten free by using this flour, and the recipe is here. Trust me, you will LOVE this bread.

I made a Strawberry Arugula salad that I found on Pinterest. I decided to serve it in individual containers for easy grabbing. Recipe can be found here .

Even though this shower wasn't 'brunch' time, I decided to do individual Greek yogurt parfaits. I did a layer of Greek yogurt, then granola, then berries, then more Greek yogurt, more granola, and a drizzle of honey. So easy and the individual servings makes it feel a little fancier than what it actually is! Most granola is already gluten free.

A gluten free menu is not difficult to create, and I assure you that Pinterest will be your best friend for inspiration!
