Hey guys! Okay you are probably asking yourself, "Why does this wedding planner randomly post recipes?" Well those who know me know that I love to cook and cook well. Not sharing some of my favorite recipes just seems plain WRONG! And odds are, those of you that read my blog probably need to eat every once and a while, so it's a win-win!!
I have my dear friend to thank for this one (CDG)! It's got all the right ingredients and you don't have to feel bad about eating too much of it. No joke, I've made this three times in the last two weeks because it's not only that delicious, it's super easy to make too. I put my own little twist on it to keep it 'light' and still super flavorful.
What you'll need:
(2) tbsp olive oil
(3) cloves of garlic, minced
(1) small white onion, diced
(1) 28oz can of diced tomatoes
(1) 15oz can white beans
(4) cups of organic chicken stock
(1) tbsp of nature's seasoning
(1/4) tsp black pepper
(1) tsp salt
(1) rotisserie chicken, picked apart
(4) ounces of tortellini, refrigerated
(3) cups of spinach
(1) cup nonfat Greek yogurt
(1/4) cup Parmesan cheese, grated
In a large pot, heat olive oil on medium/low heat with garlic. Add diced onions and simmer until tender. Add chicken stock, diced tomatoes, white means, seasonings, and bring to a simmer. Add the chicken, tortellini, and spinach. Let simmer for approximately 10 minutes for the tortellini to cook. Turn off heat, add Greek yogurt and stir completely. Serve in soup bowls and top with Parmesan cheese.
